This is a wonderful, easy recipe for a delicious chocolate dessert, enjoyed by veteran tofu-eaters and non-tofu-eaters alike. And because it has all the benefits of soy, you can make it a major part of your meal. I like to make this dessert to go with a vegetable stir-fry with brown rice or whole wheat pasta. Make the pudding, then make your dinner—by the time you’re done eating, this will be chilled and delicious. -Eva
2 ripe organic bananas, broken into chunks
1 10-oz package organic silken tofu*
1/2 cup high-quality chocolate chips
1 tsp. vanilla
Place the tofu and about half the banana chunks in the blender. Blend until smooth.
Melt the chocolate chips.
Add the melted chocolate, remaining banana chunks, and vanilla to the blender. Blend until smooth.
Put the pudding into a bowl and chill (for at least 2 hours if you can—it’s worth the wait!).
* Buying organic is especially important with tofu, as pretty much all non-organic tofu products are made with genetically modified soybeans.
Silken tofu is usually sold in sealed foil packs, and thus does not need refrigeration. Mori-nu is one large brand. You can make this with regular tofu, but the texture will not be anywhere near as silken and creamy.
Soft silken tofu makes a creamy texture more like pudding; firm silken tofu is more like mousse. Both are delicious!
